Chic Mac and Cheese

Nope! You guessed it. This isn’t a regular Mac and Cheese – this is a Chic Mac & Cheese. What makes it chic – you may ask? The truffles. of course I didn’t want to go overboard with the truffles, so I decided to just use truffle oil in the bread crumb topping. The truffle oil takes it up a notch for sure. Today I show you how to make this simple and tasty Mac & Cheese.

Here’s what you’ll need:

2 cups of Elbow Macaroni Noodles (optional – or more depending on how many people you are serving).

1 cup of Whole milk

1/3 cup of Heavy cream

1 12 oz package of Mild cheddar, Sharp + Mozzarella cheese (tip – the more variety of cheese you add the best. I kept it pretty simple on this day with just the basic cheddar’s.)

3 tablespoons of Butter (unsalted)

2 teaspoons of Black Pepper

1 pinch of Nutmeg (shhh, it’s a secret)

2 cups of Panko bread crumbs

2 teaspoons of Truffle Oil

Preheat your oven to 350 degrees

The Cheese Sauce – the star of the show!

In a small to medium sized pot on a medium heat, add in 1 cup of whole milk . Slowly start adding in your cheeses and be sure to give it a constant stir. Do not walk away! I repeat – do not walk away. We don’t want anything to stick to the bottom of the pot or to clump together. We want a smooth sauce consistency. After adding your cheeses, go ahead and your seasonings and butter. Make sure you keep to keep stirring everything until you have a cream sauce. Lastly, combine your al dente cooked marconi noodles and cheese sauce into a heat safe bowl and mix well. Pour mac and cheese into a buttered oven safe bowl or casserole dish. Set aside.

The Truffle Bread Crumb Topping- the chic element!

In a small bowl combine your 2 cups of Panko bread crumbs, salt, and pepper along with your 2 teaspoons of Truffle oil and mix well. In a medium size sauce pan over medium to high heat – stir your bread crumbs quickly until they come to a light toasted brown color. Also – you want to make sure that you do not walk away or your bread crumbs will burn. After lightly toasting , cover the top of your mac and cheese with truffle bread crumb topping.
